Pico Pi stick controller
I was until recently using cheapo zero delay boards for my groovymame cab, but they’ve started being a little flakey. After a bit of looking around I happened on the pico pi option.
The video focuses on the Pico Fighting board, but if you’re willing to solder your own wiring you can buy a Pico Pi on Amazon (around £6.50 right now) and flash the open source firmware for the PFB yourself, which is a very easy process. There are also premade screw terminal add-in boards you could add for another £9ish if you prefer.
I’ve done two so far and have a third on the way for my VSHG.

One thing to note: the boards I've had from Amazon are RP2040 and seem to be setup slightly differently pinout-wise vs the GP2040. Not a big deal because you can re-assign all of the pinouts via the web-based configuration, but here's how mine worked out of the box:

The Brook stuff seems really nice, but pricey.
If you had a bunch you wanted to use it on, the Pico Pi isn't much more expensive than the crappy Chinese zero delay gubbins for a lot more feature.

Great to see someone else talking about GP2040-CE! Amazon had the PowerA Fusion Wireless fight stick on sale for £33 quid recently and I'm in the process of putting Pico Pi's into a couple of them. I've just been soldering the wires directly to the board which feels a bit messy and makes it harder to change things around so I'd be grateful if you could point me in the direction of the screw terminal add-in board.

I’m sure there are others, but: Treadax Compatible with Raspberry PI PICO Breakout Board Flexible PCB Shield Board with Pin Header https://amzn.eu/d/8IWUmtZ
It will still need to be put together / soldered
