Fire Barrel has a pretty nice OST. Every track suits the level you're playing.
Stage 4 has you destroying a fleet of ships and a massive air craft carrier at the end. Epic destruction and scrolling! Here is the accompanying track.

The whole Mercs soundtrack is amazing. I especially love the opening from 1:39 in the video, the way the beat slows down as the helicopter takes off and them BOOM, into that absolutely kick **** level 1 track. Gives me goosebumps.

I'll echo the sentiments of many, for me it's Street Fighter II and its variants. That's what I remember most from my time in the arcades as a kid. A little more recently, Cave did indeed bash out some games with beautiful soundtracks.
So to post something not already mentioned by others, I'd say this, which happens to be a game I don't actually own, but I love the music with its rolling baseline: Sorcer Striker / Mahou Daisakusen, Level 1.

That Mystic Warriors music sounds like it could have been in one of the old breakdance films! (Please tell me I'm not the only one here who watched those a LOT when I was a kid )
For me it was always SFII like a lot of others here. Although I did buy Rodland purely for the catchy jingly music that I remember so fondly from playing it on the Amiga when I was younger
