Obviously it runs on Naomi/JVS but as long as you can run that in your cab than yes, it just uses UDLR, Start, Button 1 and Button 2 for each player. Connect the four pin cable with yellow wires to CN7 (5v in) which is in the top right hand corner of the IO board.

It's hard to say but that looks more like an CPS2 adaptor for a cabinet that is wired for six buttons from the JAMMA edge. They're simple to make though. As you've found, multi-core cable is always hard to find in the configuration you want in small cable runs and at non exorbitant prices. There are a few frame rate drops here and there,I wouldn't call them massive though and certainly not enough for it not to be hugely enjoyable in my opinion. Motion Twin are looking to optimise the game further though

SCSI2SD would be my choice too. You should be able to mount that to the CPS3 mobo fairly easily as it's much lighter.
