Yeah that's the way to go imho, and I use PCBs and a JP 360 in the cabs. Blast or NNC are fine, no need for viewlix.
The CAVE collection doesn't inclue Ketsui or DOJ-blex, both are worth getting separately though Also, I use a mini scanline generator with the VGA and it's a damn good image on the Blast City monitor. The sound runs straight from the 360 via RCA into the 001 loom's line input. Controls are really all you need to work out.

Edit: I Googleed that and looks like is my Standard Blast city loom
Blast's have a JAMMA only looms (I forget the product code) and also the JAMMA/JVS/stereo input loom (001).
The mono amp on the blast sounds like normal arcade crap, but the stereo amp is very decent.
Or you simply buy aXbox360 to Jamma box V2 from Lemony Vengance as i did and you don't have to consider about anything. Plug and play..

Their work is usually very polished, and they pay alot of attention to the details that the players care about.
